- 4 chicken breasts
- 1 pound red potatoes, halved
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
Instructions
- Place the halved red potatoes in the bottom of the crockpot.
- Season the chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a pan and brown the chicken on both sides.
- Add the browned chicken on top of the potatoes.
- Mix onion, garlic, and chicken broth together and pour over the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Garnish with parsley before serving.
Notes
- Check chicken for doneness; it should reach 165°F.
- Adjust seasoning to your taste.
