chicken and red potatoes crockpot: 7 Comforting Flavors

Ingredients

  • 4 chicken breasts
  • 1 pound red potatoes, halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the halved red potatoes in the bottom of the crockpot.
  2. Season the chicken breasts with salt, pepper, and paprika.
  3. Heat olive oil in a pan and brown the chicken on both sides.
  4. Add the browned chicken on top of the potatoes.
  5. Mix onion, garlic, and chicken broth together and pour over the chicken.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Garnish with parsley before serving.

Notes

  • Check chicken for doneness; it should reach 165°F.
