Ingredients

- 2 chicken breasts
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups broccoli florets
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cube sweet potatoes.
- In a bowl, toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Place sweet potatoes on a baking sheet and bake for 20 minutes.
- While sweet potatoes bake, season chicken breasts with salt and pepper.
- Heat a pan over medium heat and cook chicken for 6-7 minutes per side until cooked through.
- In the last 10 minutes of baking, add broccoli to the baking sheet.
- Once cooked, let chicken rest for a few minutes before slicing.
- Divide chicken, sweet potatoes, and broccoli into meal prep containers.
Notes
- Store in the fridge for up to 4 days.
- Reheat in the microwave before serving.
- Feel free to add other vegetables.
