chicken sweet potato meal prep: 5 reasons you’ll love it

Ingredients

Scale
  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups broccoli florets

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube sweet potatoes.
  3. In a bowl, toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
  4. Place sweet potatoes on a baking sheet and bake for 20 minutes.
  5. While sweet potatoes bake, season chicken breasts with salt and pepper.
  6. Heat a pan over medium heat and cook chicken for 6-7 minutes per side until cooked through.
  7. In the last 10 minutes of baking, add broccoli to the baking sheet.
  8. Once cooked, let chicken rest for a few minutes before slicing.
  9. Divide chicken, sweet potatoes, and broccoli into meal prep containers.

Notes

  • Store in the fridge for up to 4 days.
  • Reheat in the microwave before serving.
