fiesta chicken instant pot: 15-Minute Flavor Explosion

A delicious and easy fiesta chicken recipe made in the Instant Pot.

Ingredients

  • 2 lbs chicken breast
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 cup bell peppers, chopped

Instructions

  1. Place chicken in the Instant Pot.
  2. Add black beans, corn, diced tomatoes, taco seasoning, chicken broth, and bell peppers.
  3. Close the lid and set the valve to sealing.
  4. Cook on high pressure for 15 minutes.
  5. Let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  6. Shred the chicken with two forks and mix well with the other ingredients.

Notes

  • Serve with rice or tortillas.
  • Top with cheese, sour cream, or avocado if desired.
  • This dish can be frozen for later use.
