Ingredients

- 2 lbs chicken thighs
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 can (14 oz) crushed tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Set the Instant Pot to sauté mode and heat olive oil.
- Add onion and garlic, cooking until soft.
- Add chicken thighs and brown on both sides.
- Add bell pepper, crushed tomatoes, chicken broth, oregano, basil, salt, and pepper.
- Seal the lid and cook on high pressure for 15 minutes. Release pressure and serve.
Notes
- Serve over pasta or with crusty bread.
- You can substitute chicken breasts for thighs.
- Adjust seasonings to your taste.
