Lettuce Wrap Chicken Salad: 7 Reasons You’ll Adore It

A hearty and flavorful chicken cacciatore made in an Instant Pot.

Ingredients

  • 2 lbs chicken thighs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add onion and garlic, cooking until soft.
  3. Add chicken thighs and brown on both sides.
  4. Add bell pepper, crushed tomatoes, chicken broth, oregano, basil, salt, and pepper.
  5. Seal the lid and cook on high pressure for 15 minutes. Release pressure and serve.

Notes

  • Serve over pasta or with crusty bread.
  • You can substitute chicken breasts for thighs.
