Instructions
- Rinse quinoa under cold water and cook according to package instructions.
- In a large bowl, combine cooked quinoa, spinach, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
