- 1 ripe avocado
- 1 egg

Instructions
- Toast the slices of bread until golden brown.
- While the bread is toasting, bring a small pot of water to a simmer.
- Crack the egg into a small bowl.
- Gently slide the egg into the simmering water and poach for about 3-4 minutes.
- While the egg is cooking, mash the avocado in a bowl and season with salt and pepper.
- Spread the mashed avocado evenly on the toasted bread.
- Remove the egg from the water and place it on top of the avocado toast.
- Sprinkle with red pepper flakes if desired.
