Instructions
- Heat olive oil in a pot over medium heat.
- Add garlic and onion, sauté until soft.
- Stir in tomatoes, broth, salt, pepper, and cumin.
- Add quinoa and mixed vegetables.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Fluff with a fork and serve hot.
