- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 4 large eggs
- 1 cup vegetable oil
- 3 cups grated carrots
- 1 cup orange juice
- 1 tablespoon orange zest
- 1 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, and ginger.
- In another bowl, whisk eggs and oil together.
- Add grated carrots, orange juice, and orange zest to the egg mixture.
- Combine dry and wet ingredients and mix well.
- If using, fold in walnuts.
- Divide batter between the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks.
Notes
- Can be frosted with cream cheese frosting.
- Store in an airtight container for up to 5 days.
- Add more orange zest for a stronger flavor.
