Carrot-Orange Cake with a Modern Twist to Brighten Your Day

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, and ginger.
  4. In another bowl, whisk eggs and oil together.
  5. Add grated carrots, orange juice, and orange zest to the egg mixture.
  6. Combine dry and wet ingredients and mix well.
  7. If using, fold in walnuts.
  8. Divide batter between the prepared pans.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Cool in pans for 10 minutes, then transfer to wire racks.

Notes

  • Can be frosted with cream cheese frosting.
  • Store in an airtight container for up to 5 days.
  • Add more orange zest for a stronger flavor.
