Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced chicken and cook until no longer pink.
- Stir in bell pepper, onion, and fajita seasoning.
- Cook until vegetables are tender.
- In a bowl, layer rice, black beans, chicken mixture, corn, and avocado.
- Garnish with cilantro and serve with lime wedges.
