Ingredients

- 4 slices of bacon, chopped
- 1 onion, diced
- 2 stalks of celery, diced
- 2 medium potatoes, peeled and diced
- 2 cups of clam juice
- 1 cup of heavy cream
- 2 cans of chopped clams, drained
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook bacon in a large pot over medium heat until crisp.
- Add onion and celery; cook until soft.
- Add potatoes and clam juice; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and clams; heat through.
- Season with salt and pepper.
- Serve hot, garnished with parsley.
Notes
- For a thicker chowder, add a bit of flour to the bacon before adding vegetables.
- Feel free to add corn for sweetness.
- Use fresh clams for better flavor if available.
