Ingredients

- 1 cup jasmine rice
- 1 cup coconut milk
- 1/2 cup water
- 1 lime (zested and juiced)
- 1/2 teaspoon salt
- 2 tablespoons chopped cilantro (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine coconut milk, water, salt, and lime juice.
- Add the rinsed rice to the pot and stir to combine.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff rice with a fork and mix in lime zest and cilantro, if using.

- Adjust lime juice to taste.
- Can be served warm or at room temperature.
- Pairs well with grilled meats and seafood.
