- 2 cups of white rice
- 4 cups of chicken broth
- 1 pound of chicken thighs, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add diced chicken, cook until browned.
- Stir in rice and cook for 2 minutes.
- Add chicken broth, bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes.
- Stir in frozen peas, cook for an additional 5 minutes.
- Season with salt and pepper before serving.

- Use brown rice for a healthier option.
- Leftovers can be stored in the refrigerator for up to 3 days.
