Ingredients

- 2 cups of rice

Instructions
- Rinse the rice under cold water.
- In a pot, bring water to a boil.
- Add the rice, salt, and olive oil.
- Reduce heat to low and cover the pot.
- Cook for 15 minutes or until water is absorbed.
- Stir in mixed vegetables and let it steam for 5 minutes.
- Fluff rice with a fork and serve.
