Ingredients

- 1 cup dried chickpeas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp coriander
- Salt to taste
- Oil for frying
- 4 whole wheat wraps
- 1 cup lettuce, shredded
- 1 tomato, sliced
- 1/2 cucumber, sliced
- 1/2 cup tahini sauce
Instructions
- Soak chickpeas overnight in water.
- Drain and rinse chickpeas.
- Blend chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, and salt until coarse.
- Form mixture into small balls.
- Heat oil in a pan and fry falafel until golden brown.
- Warm wraps in a separate pan.
- Place lettuce, tomato, cucumber, and falafel on each wrap.
- Drizzle tahini sauce over the top.
- Roll up the wraps and serve warm.
Notes
- Chickpeas can be canned for quicker preparation.
- Adjust seasonings to your taste.
- Serve with additional tahini sauce if desired.
