Ingredients

  • 1 cup dried chickpeas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt to taste
  • Oil for frying
  • 4 whole wheat wraps
  • 1 cup lettuce, shredded
  • 1 tomato, sliced
  • 1/2 cucumber, sliced
  • 1/2 cup tahini sauce

Instructions

  1. Soak chickpeas overnight in water.
  2. Drain and rinse chickpeas.
  3. Blend chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, and salt until coarse.
  4. Form mixture into small balls.
  5. Heat oil in a pan and fry falafel until golden brown.
  6. Warm wraps in a separate pan.
  7. Place lettuce, tomato, cucumber, and falafel on each wrap.
  8. Drizzle tahini sauce over the top.
  9. Roll up the wraps and serve warm.

Notes

  • Chickpeas can be canned for quicker preparation.
  • Adjust seasonings to your taste.
  • Serve with additional tahini sauce if desired.
