- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add mixed vegetables and stir-fry for 2-3 minutes.
- Push the vegetables to one side and pour in the beaten eggs.
- Scramble the eggs until fully cooked.
- Add the cooked rice and mix well.
- Stir in soy sauce, sesame oil, salt, and pepper.
- Add green onions and stir for another 2 minutes to heat through.
Notes
- Use day-old rice for better texture.
- Feel free to add cooked chicken, shrimp, or tofu for protein.
- Adjust soy sauce quantity to taste.
