Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add onion and sauté until translucent.
  4. Add spinach and cherry tomatoes, cooking until spinach wilts.
  5. In a bowl, whisk eggs, salt, and pepper.
  6. Pour the egg mixture into the skillet.
  7. Sprinkle feta cheese on top.
  8. Cook on the stove for 2-3 minutes, then transfer to the oven.
  9. Bake for 15-20 minutes or until set.
  10. Let cool slightly before slicing and serving.
