Instructions
- Rinse the rice under cold water.
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in bell pepper and zucchini, cook for 5 minutes.
- Add diced tomatoes, cumin, paprika, salt, and pepper.
- Combine with rice and 4 cups of water.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes.
- Fluff rice with a fork and serve hot.
