Ingredients

  • 1/2 cup corn
  • 1 avocado, sliced

Instructions

  1. Rinse jasmine rice under cold water.
  2. Combine rice and water in a pot and bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a pan, sauté chicken with soy sauce, lime juice, and chili powder until cooked.
  5. Add bell pepper and corn to the pan and cook for another 5 minutes.
  6. Serve chicken mixture over rice and top with avocado and cilantro.
