- 1 cup jasmine rice
- 2 cups water
- 1 lb chicken breast, sliced
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp chili powder
- 1 bell pepper, sliced
- 1/2 cup corn
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Rinse jasmine rice under cold water.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, sauté chicken with soy sauce, lime juice, and chili powder until cooked.
- Add bell pepper and corn to the pan and cook for another 5 minutes.
- Serve chicken mixture over rice and top with avocado and cilantro.

- Adjust spice level to your taste.
- Can substitute chicken with tofu for a vegetarian option.
- Serve with lime wedges for extra flavor.
