Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and avocado.
  6. Add cooled quinoa to the bowl.
  7. Drizzle olive oil and lemon juice over the mixture.
  8. Season with salt and pepper. Toss gently.
  9. Top with feta cheese.
  10. Serve immediately or refrigerate for later.
