Ingredients

- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh herbs (parsley, basil, or chives), chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk the eggs and season with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add spinach and cook until wilted.
- Pour the egg mixture into the skillet and stir gently.
- Sprinkle feta cheese and herbs over the top.
- Cook for 2-3 minutes until edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is set.
Notes
- Serve warm or at room temperature.
- Can be stored in the refrigerator for up to 3 days.
- Feel free to add other vegetables you like.
