Ingredients

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh herbs (parsley, basil, or chives), chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add onion and bell pepper, sauté until soft.
  5. Add spinach and cook until wilted.
  6. Pour the egg mixture into the skillet and stir gently.
  7. Sprinkle feta cheese and herbs over the top.
  8. Cook for 2-3 minutes until edges start to set.
  9. Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is set.

Notes

  • Serve warm or at room temperature.
  • Can be stored in the refrigerator for up to 3 days.
  • Feel free to add other vegetables you like.
