Ingredients

  • 1/4 cup milk
  • 1 cup fresh herbs (parsley, chives, basil)
  • 1 cup diced vegetables (bell peppers, onions)
  • 1/2 cup grated cheese (feta or cheddar)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs and milk.
  3. Add the fresh herbs, diced vegetables, and cheese. Mix well.
  4. Season with salt and pepper.
  5. Heat olive oil in an oven-safe skillet over medium heat.
  6. Pour the egg mixture into the skillet.
  7. Cook for 5 minutes until edges are set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until the center is set.
  9. Let it cool for a few minutes before slicing.
