- 4 medium carrots, sliced
- 4 medium parsnips, sliced

Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix honey, olive oil, salt, and pepper.
- Add carrots and parsnips to the bowl and toss to coat.
- Spread vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through.
- Remove from oven and sprinkle with fresh thyme before serving.
Notes
- Adjust honey for desired sweetness.
- Try adding other herbs for variation.
- Best served warm.
