Ingredients

- 2 pounds of potatoes
- 1 cup of mayonnaise
- 2 tablespoons of mustard
- 1 medium onion, diced
- 2 celery stalks, diced
- 1/4 cup of pickle relish
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes until tender, about 15-20 minutes.
- Drain and let cool, then peel and chop into cubes.
- In a large bowl, combine mayonnaise, mustard, onion, celery, and pickle relish.
- Add the chopped potatoes and mix gently.
- Season with salt and pepper to taste.
- Refrigerate for at least 2 hours before serving.
Notes
- Use Yukon Gold or red potatoes for best results.
- Adjust mustard and relish according to your taste.
- Can be made a day ahead for better flavor.
