- 2 cups pasta
- 1 lb chicken breast, diced
- 2 cups mixed seasonal vegetables (zucchini, bell peppers, carrots)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Add minced garlic and cook for another minute.
- Add mixed vegetables and sauté until tender.
- Stir in lemon juice and zest, then add cooked pasta.
- Season with salt and pepper. Toss to combine.
- Garnish with fresh parsley before serving.

- Use any seasonal vegetables you prefer.
- Feel free to add grated parmesan cheese for extra flavor.
