- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup cooked bacon bits
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry the potatoes.
- Pierce each potato with a fork.
- Rub with olive oil and sprinkle with salt.
- Bake for 45-60 minutes until tender.
- Remove from oven and let cool slightly.
- Cut a slit in each potato and fluff the inside with a fork.
- Top with cheese, sour cream, green onions, and bacon bits.
Notes
- For extra flavor, add garlic powder to the potatoes before baking.
- You can substitute Greek yogurt for sour cream.
- Feel free to mix in other toppings like broccoli or chili.
