Lobster Bisque July — Homemade: 5 Steps to Culinary Bliss

Ingredients

  • 2 lobsters (about 1.5 pounds each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brandy
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Boil the lobsters in salted water for 8-10 minutes.
  2. Remove the meat from the lobsters and chop into small pieces.
  3. In a large pot, melt butter over medium heat.
  4. Add onion, carrots, celery, and garlic; sauté until soft.
  5. Pour in brandy and cook for 2 minutes.
  6. Add seafood stock and thyme; bring to a simmer.
  7. Add lobster meat and heavy cream; cook for 5 minutes.
  8. Season with salt and pepper.
  9. Blend the soup until smooth if desired.
  10. Serve hot with crusty bread.

Notes

  • Use fresh lobster for best flavor.
  • Adjust seasoning to your preference.
  • Can be made ahead and reheated.
