Ingredients

- 2 lobsters (about 1.5 pounds each)
- 4 cups seafood stock
- 1 cup heavy cream
- 2 tablespoons butter
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Boil the lobsters in salted water for 8-10 minutes.
- Remove the meat from the lobsters and chop into small pieces.
- In a large pot, melt butter over medium heat.
- Add onion, carrots, celery, and garlic; sauté until soft.
- Pour in brandy and cook for 2 minutes.
- Add seafood stock and thyme; bring to a simmer.
- Add lobster meat and heavy cream; cook for 5 minutes.
- Season with salt and pepper.
- Blend the soup until smooth if desired.
- Serve hot with crusty bread.
