- 1 cup almond milk
- 1/4 cup matcha powder
- 1/4 cup sugar
- 1/2 cup fresh strawberries, pureed
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a saucepan, combine almond milk, matcha powder, and sugar.
- Heat over medium until sugar dissolves.
- In a small bowl, mix cornstarch with a bit of cold water to create a slurry.
- Stir the slurry into the saucepan and cook until thickened.
- Remove from heat and mix in vanilla extract and salt.
- Pour half into serving dishes and let it cool slightly.
- Layer the strawberry puree over the matcha pudding.
- Top with remaining matcha pudding and chill in the refrigerator for at least 2 hours.
Notes
- Use ripe strawberries for best flavor.
- Adjust sweetness to your preference.
- Can be garnished with fresh strawberries or whipped cream.
