Ingredients

  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add diced potatoes and broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Use an immersion blender to puree the soup to desired consistency.
  6. Stir in heavy cream, salt, and pepper.
  7. Serve hot, topped with cheese if desired.
