Omelet July Summer: 5 Fresh Veggies to Brighten Your Day

Ingredients

  • 3 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheese
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add bell peppers and spinach to the skillet, sauté for 2 minutes.
  4. Pour eggs over the vegetables in the skillet.
  5. Cook until the eggs start to set, about 3-4 minutes.
  6. Add tomatoes and cheese on one half of the omelet.
  7. Fold the omelet and cook for another 2 minutes.
  8. Slide the omelet onto a plate and serve hot.
