Ingredients

- 1 cup small pasta
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Add diced tomatoes, vegetable broth, and oregano. Bring to a boil.
- Add pasta and beans. Reduce heat and simmer until pasta is cooked.
- Season with salt and pepper. Serve hot.

- Use any small pasta you prefer.
- Can add spinach or kale for extra nutrition.
