Ingredients

- 2 cups fresh peas
- 1 cup cooked quinoa
- 1/2 cup chopped cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Boil peas in salted water for 2-3 minutes.
- Drain and rinse under cold water.
- In a large bowl, combine peas, quinoa, cucumber, tomatoes, onion, and parsley.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and mix well.
- Serve chilled or at room temperature.
Notes
- Feel free to add more vegetables as desired.
- This salad can be made a day ahead.
- Great as a side dish or light meal.
