Ingredients

  • 2 cups fresh peas
  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil peas in salted water for 2-3 minutes.
  2. Drain and rinse under cold water.
  3. In a large bowl, combine peas, quinoa, cucumber, tomatoes, onion, and parsley.
  4. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over salad and mix well.
  6. Serve chilled or at room temperature.
