Ingredients

  • 1 lb beef bones
  • 1 onion, halved
  • 1 ginger root, halved
  • 3 star anise
  • 1 cinnamon stick
  • 1 tsp coriander seeds
  • 1 tsp fennel seeds
  • 1 lb rice noodles
  • 1 lb thinly sliced beef
  • 3 green onions, chopped
  • 1 cup bean sprouts
  • Fresh basil leaves
  • Lime wedges

Instructions

  1. Roast the beef bones, onion, and ginger in the oven at 400°F for 30 minutes.
  2. In a large pot, add the roasted ingredients and cover with water. Simmer for at least 4 hours.
  3. Add star anise, cinnamon, coriander, and fennel. Simmer for another hour.
  4. Strain the broth and return to the pot. Season with salt to taste.
  5. Cook rice noodles according to package instructions.
  6. Place cooked noodles in bowls, top with sliced beef, and pour hot broth over them.
  7. Garnish with green onions, bean sprouts, basil, and lime.

Notes

  • Adjust spices according to your preference.
  • Use a meatier cut for richer broth.
  • Serve immediately for best flavor.
