Ingredients

- 2 cups of mixed vegetables
- 1 cup of quinoa
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 tablespoon of lemon juice
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa, water, and salt. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add mixed vegetables and sauté for 5-7 minutes.
- Stir in cooked quinoa and lemon juice.
- Serve warm.

- Feel free to use any vegetables you have on hand.
- This dish can be served hot or cold.
