Ingredients

  • 2 cups hominy
  • 1 pound pork shoulder, cut into chunks
  • 6 cups chicken broth
  • 1 onion, chopped

  • 1 teaspoon oregano
  • Salt to taste
  • 2 limes, cut into wedges
  • Radishes, for garnish
  • Cabbage, shredded, for garnish
  • Avocado, diced, for garnish

Instructions

  1. Rinse the hominy under cold water.
  2. In a large pot, combine pork, chicken broth, onion, garlic, cumin, oregano, and salt.
  3. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  4. Add hominy and simmer for an additional 30 minutes.
  5. Serve hot with lime wedges, radishes, cabbage, and avocado on the side.

Notes

  • Adjust seasoning to your taste.
  • Can use chicken or turkey instead of pork.
  • Leftovers can be stored in the fridge for up to 3 days.
