- 2 cups all-purpose flour

- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa, baking soda, baking powder, and salt.
- In another bowl, whisk oil, buttermilk, eggs, food coloring, and vanilla.
- Combine wet and dry ingredients until smooth.
- Drop dough onto baking sheets, forming rounds.
- Bake for 12-15 minutes or until set.
- Let cool completely.
- In a bowl, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla; mix until creamy.
- Spread filling on half of the cookies and top with the other half.
Notes
- Store in the refrigerator for up to three days.
- Use gel food coloring for brighter color.
- Adjust sweetness by adding more or less sugar in the filling.
