Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup strawberry puree
  • 1 cup blueberry puree
  • 1/4 cup whipped cream for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract and eggs, one at a time, mixing well.
  5. Pour half of the mixture over the crust.
  6. Add strawberry puree on top and swirl gently.
  7. Pour the remaining cheesecake mixture over the strawberry layer.
  8. Add blueberry puree on top and swirl gently again.
  9. Bake for 55-60 minutes or until set.
  10. Cool, then refrigerate for at least 4 hours before serving.

Notes

  • Use fresh fruit for purees for the best flavor.
  • Allow the cheesecake to sit overnight for better taste.
  • Top with whipped cream before serving.
