- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup strawberry puree
- 1 cup blueberry puree
- 1/4 cup whipped cream for topping
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In a bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well.
- Pour half of the mixture over the crust.
- Add strawberry puree on top and swirl gently.
- Pour the remaining cheesecake mixture over the strawberry layer.
- Add blueberry puree on top and swirl gently again.
- Bake for 55-60 minutes or until set.
- Cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh fruit for purees for the best flavor.
- Allow the cheesecake to sit overnight for better taste.
- Top with whipped cream before serving.
