Ingredients

  • 4 salmon fillets
  • 2 ripe mangos, diced
  • 1 red bell pepper, diced

  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Grill or bake the salmon for 5-7 minutes on each side, or until cooked through.
  4. In a bowl, combine the mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice.
  5. Mix well to combine and season with salt and pepper.
  6. Top the cooked salmon with the mango salsa.
  7. Serve immediately.
