- 4 salmon fillets
- 2 ripe mangos, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Preheat your grill or oven to medium-high heat.
- Season the salmon fillets with salt and pepper.
- Grill or bake the salmon for 5-7 minutes on each side, or until cooked through.
- In a bowl, combine the mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice.
- Mix well to combine and season with salt and pepper.
- Top the cooked salmon with the mango salsa.
- Serve immediately.
Notes
- Feel free to adjust the spice level by adding more or less jalapeño.
- Serve with rice or a side salad for a complete meal.
- This dish is best enjoyed fresh.
