Ingredients

  • 1 cup all-purpose flour

  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, mix grated carrots, sugars, and oil.
  4. Add eggs, and mix until combined.
  5. In another bowl, whisk flour, baking powder, baking soda, spices, and salt.
  6. Gradually add dry ingredients to the wet mixture.
  7. Fold in chopped walnuts.
  8. Divide the batter between the prepared pans.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let the cakes cool before frosting.

  • Store leftovers in the fridge.
  • Use fresh carrots for best flavor.
  • Can add raisins for extra sweetness.
