- 2 cups grated carrots

Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, mix grated carrots, sugars, and oil.
- Add eggs, and mix until combined.
- In another bowl, whisk flour, baking powder, baking soda, spices, and salt.
- Gradually add dry ingredients to the wet mixture.
- Fold in chopped walnuts.
- Divide the batter between the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool before frosting.
Notes
- Store leftovers in the fridge.
- Use fresh carrots for best flavor.
- Can add raisins for extra sweetness.
