- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 8 corn tortillas
- 1 cup mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- In a bowl, mix shrimp with olive oil, chili powder, cumin, garlic powder, and salt.
- Heat a skillet over medium heat and cook shrimp until pink, about 3-4 minutes.
- In another bowl, combine mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
- Warm corn tortillas in a dry skillet for about 30 seconds on each side.
- Assemble tacos by placing shrimp on tortillas and topping with mango salsa.
Notes
- Adjust spice level by adding more or less jalapeño.
- Use fresh mango for best flavor.
- Can substitute shrimp with grilled chicken.
