Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 8 corn tortillas
  • 1 cup mango, diced
  • 1/2 red onion, diced
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a bowl, mix shrimp with olive oil, chili powder, cumin, garlic powder, and salt.
  2. Heat a skillet over medium heat and cook shrimp until pink, about 3-4 minutes.
  3. In another bowl, combine mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
  4. Warm corn tortillas in a dry skillet for about 30 seconds on each side.
  5. Assemble tacos by placing shrimp on tortillas and topping with mango salsa.

Notes

  • Adjust spice level by adding more or less jalapeño.
  • Use fresh mango for best flavor.
  • Can substitute shrimp with grilled chicken.
