Ingredients

- 1 lb asparagus, trimmed
- 1 cup peas, fresh or frozen
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place asparagus on a baking sheet.
- Drizzle with olive oil, and season with salt and pepper.
- Roast for 10-15 minutes until tender.
- In a pot, bring water to a boil and add peas for 2-3 minutes.
- Drain peas and combine with roasted asparagus and herbs.
- Toss gently and serve warm.
