Strawberry Gazpacho July — Homemade: 5 Refreshing Tips

Ingredients

  • 2 cups fresh strawberries, hulled
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cups tomato juice
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Blend strawberries in a blender until smooth.
  2. Add cucumber, bell pepper, onion, tomato juice, olive oil, and balsamic vinegar.
  3. Blend until desired consistency is reached.
  4. Season with salt and pepper.
  5. Chill in the refrigerator for at least 1 hour before serving.
