Ingredients

  • 1 cup chopped zucchini

  • 1 cup chopped tomatoes
  • 1/2 cup chopped onion
  • 1/4 cup milk
  • 1 cup shredded cheese
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add onion, zucchini, and bell peppers. Sauté until softened.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Add the sautéed vegetables and tomatoes to the egg mixture.
  6. Pour the mixture back into the skillet.
  7. Sprinkle cheese on top.
  8. Bake in the oven for 20-25 minutes or until set.
  9. Let it cool slightly before slicing and serving.
