Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup water
- Optional toppings: sour cream, shredded cheese, chopped green onions
Instructions
- In a large pot, brown the ground beef and onion over medium heat.
- Drain excess fat.
- Add black beans, kidney beans, corn, diced tomatoes, taco seasoning, beef broth, and water.
- Stir well and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Serve hot with optional toppings.
Notes
- This soup can be made ahead and stored in the refrigerator.
- It freezes well for up to 3 months.
- Adjust seasoning to taste.
