- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup corn kernels
- 2 cups cooked chicken, shredded
- 1 lime, juiced
- 1 cup tortilla strips
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Stir in diced tomatoes, chicken broth, black beans, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add corn and shredded chicken. Cook for another 10 minutes.
- Stir in lime juice just before serving.
- Top with tortilla strips and cilantro.
